Peach Margarita Pops

Summer is officially here which means longer days, shorter shorts, drinks by the pool, and of course real hot girl shit lol. In the adult world summer really doesn’t mean much, but ya girl is still excited. Summer brings about this vibe that I love so much. It’s free, it’s fun, and it’s forgiving in all the ways that make you want to live your best life. 

If you’re a southerner reading this then you know that The Peach Truck is a BFD. Big enough of a deal that my friends and I decided to buy all of the peaches we could and throw a peach party. Yep, that’s right, a whole party dedicated to one sweet, juicy fruit. 

It’s goofy, for sure, but everyone did such a phenomenal job taking the theme seriously and bringing their best peach treat to the table. 

The dinner menu was popping with guests making everything from pulled pork and peach grilled cheese sandwiches to peach pie and peach preserves. Because I don’t really cook I, of course, decided to bring the alcohol.

My contribution to the party combined two of my all-time summer favorites- margaritas and Popsicles. These simple treats were bursting with peach flavor and contained enough tequila to keep everyone more than satisfied. 

What you’ll need (makes about 12)

1 can of peaches in syrup

1 lime

1 peach

1 bottle of Tropicana peach lemonade

El Jimador tequila (or your tequila of choice)

1/2 cup lime juice 

Dixie Cups

popsicle sticks

Prep:

Sliced lime and dice peaches

To Make:

  1. Place can of peaches in a blender and puree until smooth

  2. add 1.5 cups El Jimador tequila

  3. Add 1 cup Tropicana peach lemonade

  4. Add 1/2 cup of lime juice

  5. Mix until everything is blended together

  6. Pour mixture into Dixie cup a little under full

  7. add peach chunks

  8. Slide popsicle stick through the lime slice and place it in the center of the cup

  9. Freeze until solid

I froze mine overnight and enjoyed them with friends all day the next day. Tequila is not the best alcohol for freezing so your freeze time will depend on how close to the recipe you stay.
